Chicken Gyros with Tzatziki

Yogurt-and-lemon marinated chicken thighs, charred and sliced, tucked into warm pita with tzatziki, tomato, and red onion.

Ingredients

  • boneless skinless chicken thighs2 lb
  • greek yogurt1/2 cup
  • lemons2 (juice and zest)
  • garlic5 cloves, grated
  • dried greek oregano2 tsp
  • ground cumin1 tsp
  • smoked paprika1 tsp
  • extra-virgin olive oil3 tbsp
  • pita bread4 large
  • tzatziki1 cup
  • ripe tomato1, sliced
  • red onion1/2, thinly sliced

Steps

  1. Whisk the marinade ingredients.

    Whisk the yogurt with lemon juice and zest, garlic, oregano, cumin, paprika, olive oil, 1 tsp salt, and plenty of pepper.

  2. Marinate the chicken.

    Toss the chicken in the marinade and refrigerate at least 20 minutes (or up to overnight).

  3. Cook the chicken in skillet.

    Heat a heavy skillet or grill pan over medium-high. Cook the chicken in batches without crowding, 5 minutes per side, until charred and cooked through.

  4. Rest and slice the chicken.

    Rest the chicken for 5 minutes, then slice into strips.

  5. Assemble the gyros.

    Warm the pita in the residual pan heat. Smear with tzatziki, pile on the chicken, tomato, and onion, and fold to eat.
