Classic American Cheeseburger

A juicy diner-style smashburger on a soft potato bun — seasoned beef seared hard, melty American cheese, lettuce, tomato, and a swipe of special sauce.

Ingredients

  • ground beef (80/20)1 lb
  • American cheese slices4
  • potato hamburger buns4
  • iceberg lettuce4 leaves
  • tomato1, sliced
  • yellow onion1/2, thinly sliced
  • dill pickle chips1/2 cup
  • mayonnaise1/4 cup
  • ketchup2 tbsp
  • yellow mustard1 tbsp
  • kosher saltto taste
  • black pepperto taste
  • neutral oil1 tbsp

Steps

  1. Make the special sauce.

    Stir mayo, ketchup, and mustard together with a splash of pickle brine for the special sauce. Set aside.

  2. Divide the beef and heat skillet.

    Divide the beef into 4 loose balls — do not pack them. Heat a cast-iron skillet over high heat with the oil until smoking.

  3. Smash and sear the patties.

    Place each ball in the pan and smash flat with a spatula. Salt and pepper generously. Sear undisturbed until a deep crust forms, about 2 minutes.

  4. Flip and melt cheese on patties.

    Flip, top each patty with a slice of cheese, and cook 1 minute more.

  5. Toast buns and assemble burger.

    Toast the buns cut-side down in the same pan for 30 seconds. Slather with sauce, layer lettuce, tomato, onion, pickles, and the patty. Close and serve.
