Classic French Toast
Thick slices of brioche soaked in a vanilla-cinnamon custard and griddled in butter until golden, with a final dusting of powdered sugar.
Ingredients
- thick-sliced brioche4 slices, day-old
- large eggs3
- whole milk1/2 cup
- heavy cream2 tbsp
- granulated sugar1 tbsp
- vanilla extract1 tsp
- ground cinnamon1/2 tsp
- kosher saltpinch
- unsalted butter3 tbsp
- powdered sugarfor dusting
- maple syrupfor serving
Steps
Whisk custard ingredients.
Whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt in a wide shallow dish until smooth.
Soak brioche slices in custard.
Soak each slice of brioche in the custard for 15 seconds per side — long enough to saturate but not fall apart.
Melt butter and cook slices.
Melt 1 tbsp butter in a nonstick skillet over medium heat. Cook 2 slices at a time until deep gold, about 2.5 minutes per side.
Wipe pan and repeat cooking.
Wipe the pan, add fresh butter, and repeat with remaining slices.
Dust with powdered sugar.
Dust generously with powdered sugar and pass warm maple syrup at the table.
