Classic Minestrone

A pot of vegetables, beans, and small pasta in a tomato-rich broth — equal parts pantry and garden, finished with parmesan and olive oil.

Ingredients

  • yellow onion1, diced
  • carrots2, diced
  • celery2 stalks, diced
  • garlic3 cloves, minced
  • zucchini1, diced
  • green beans1 cup, cut into 1-inch pieces
  • canned diced tomatoes1 (15 oz) can
  • cannellini beans1 (15 oz) can, drained
  • vegetable stock6 cups
  • small pasta (ditalini)3/4 cup
  • extra-virgin olive oil3 tbsp
  • parmesan rind plus grated parmesan1 rind + 1/2 cup grated
  • fresh basilsmall handful

Steps

  1. Sweat vegetables and garlic.

    Sweat onion, carrots, and celery in olive oil with a pinch of salt over medium heat until soft, 8 minutes. Stir in garlic for 30 seconds.

  2. Add tomatoes, beans, stock, and parmesan rind.

  3. Stir in zucchini, green beans, and pasta.
