Cucumber Mint Raita

A cooling yogurt sauce flecked with cucumber, mint, and toasted cumin — the perfect counterweight to biryani, dal, or grilled kebabs.

Ingredients

  • plain whole-milk yogurt1.5 cups
  • English cucumber1, grated
  • fresh mint leaves2 tbsp, chopped
  • fresh cilantro1 tbsp, chopped
  • cumin seeds1/2 tsp
  • Kashmiri chili powder1/4 tsp, plus a pinch to garnish
  • fine sea salt1/2 tsp

Steps

  1. Toast and crush cumin seeds.

    Toast the cumin seeds in a dry skillet over medium heat until fragrant, about 1 minute. Crush coarsely.

  2. Squeeze the grated cucumber to remove excess water.

  3. Whisk yogurt and fold in ingredients.

    Whisk the yogurt smooth, then fold in the cucumber, mint, cilantro, toasted cumin, chili powder, and salt.

  4. Chill and garnish before serving.

    Chill at least 15 minutes. Garnish with a pinch of chili powder before serving.
