Fudgy Brownies
Dense, glossy-topped brownies with a deep chocolate flavor, crackly tops, and a bittersweet edge — one bowl, no mixer.
Ingredients
- unsalted butter10 tbsp
- bittersweet chocolate6 oz, chopped
- granulated sugar1.25 cups
- large eggs2 plus 1 yolk
- vanilla extract2 tsp
- all-purpose flour2/3 cup
- unsweetened cocoa powder1/4 cup
- kosher salt3/4 tsp
- dark chocolate chunks1/2 cup
Steps
Preheat oven and prepare pan.
Heat oven to 350°F. Line an 8-inch square pan with parchment, leaving overhangs.
Melt butter and chocolate.
Melt butter and bittersweet chocolate together in a heatproof bowl over barely simmering water. Stir until smooth and remove from heat.
Whisk in sugar and eggs.
Whisk in sugar, then eggs and yolk one at a time, then vanilla. Beat vigorously for 1 full minute — this builds the crackly top.
Fold dry ingredients and chocolate chunks.
Sift flour, cocoa, and salt over the batter and fold until just combined. Fold in chocolate chunks. Pour into the pan and smooth the top.
Bake and cool brownies.
Bake until a toothpick inserted in the center comes out with moist crumbs, about 28 minutes. Cool completely in the pan before slicing.
