Honey Almond Granola

A clumpy, golden granola of rolled oats, almonds, and pumpkin seeds bound with honey and olive oil — keeps for two weeks in a jar.

Ingredients

  • rolled oats3 cups
  • sliced almonds1 cup
  • raw pumpkin seeds1/2 cup
  • honey1/2 cup
  • extra-virgin olive oil1/3 cup
  • light brown sugar1/4 cup
  • vanilla extract1 tsp
  • ground cinnamon1 tsp
  • kosher salt3/4 tsp
  • egg white1, lightly beaten
  • dried tart cherries3/4 cup

Steps

  1. Heat oven and prepare pan.

    Heat oven to 300°F. Line a sheet pan with parchment.

  2. Mix dry and wet ingredients separately.

    Toss oats, almonds, and pumpkin seeds in a large bowl. In a small bowl, whisk honey, oil, brown sugar, vanilla, cinnamon, and salt.

  3. Pour wet over dry and stir.

    Pour the wet over the dry and stir to coat. Fold in the egg white — it makes the cluster.

  4. Bake granola without stirring.

    Press into an even layer on the sheet pan. Bake 30-35 minutes, rotating once, until deep gold. Do not stir.

  5. Cool and store granola clusters.

    Cool completely on the pan — this is when it crisps. Break into clusters and toss with dried cherries. Store in a sealed jar.
