Horiatiki (Greek Village Salad)

The honest village salad — ripe tomatoes, cucumber, green pepper, red onion, briny olives, and a thick slab of feta crowned with oregano and a generous pour of olive oil.

Ingredients

  • ripe tomatoes4 large, cut in wedges
  • english cucumber1, half-peeled, sliced
  • green bell pepper1, in thin rings
  • red onion1/2, thinly sliced
  • kalamata olives1/2 cup
  • feta cheese (block)200 g slab
  • extra-virgin olive oil1/4 cup
  • red wine vinegar1 tbsp
  • dried greek oregano1 tsp
  • flaky sea saltto taste

Steps

  1. Salt the tomato wedges.

    Salt the tomato wedges lightly and let them sit for 5 minutes to draw out their juice.

  2. Layer the vegetables in bowl.

    Layer the tomatoes, cucumber, pepper, and onion in a wide shallow bowl.

  3. Scatter olives and add feta.

    Scatter the olives over the top, then lay the slab of feta on the salad — never crumble it.

  4. Drizzle and season the salad.

    Drizzle with olive oil and vinegar, shower with oregano and flaky salt. Serve with crusty bread to mop the juices.
