Sapporo Miso Ramen

Hokkaidō's answer to the cold: a punchy red-miso broth slicked with butter and corn, ground pork stir-fried in sesame oil for backbone, curly yellow noodles bobbing underneath. Born in postwar Sapporo and still the city's signature bowl.

Ingredients

  • curly wheat ramen noodles (fresh or frozen)2 portions
  • ground pork6 oz
  • red miso (aka miso)3 tbsp
  • white miso (shiro miso)1 tbsp
  • chicken stock4 cups
  • toasted sesame oil2 tsp
  • garlic, minced3 cloves
  • fresh ginger, grated1 tbsp
  • doubanjiang (chili bean paste)1 tsp
  • mirin1 tbsp
  • soy sauce1 tbsp
  • unsalted butter2 tsp
  • bean sprouts1 cup
  • sweet corn kernels1/2 cup
  • scallions, sliced2
  • nori sheet, halved1

Steps

  1. Cook ground pork in sesame oil.

    Heat sesame oil in a heavy pot over medium-high. Add ground pork and break it up, cooking until the fat renders and the edges crisp.

  2. Toast aromatics and doubanjiang.

    Push pork to one side, add garlic, ginger, and doubanjiang to the bare pan, and toast for 30 seconds until fragrant.

  3. Toast misos and add stock.

    Stir in both misos and let them toast against the pan for 20 seconds before pouring in the chicken stock.

  4. Simmer broth with mirin and soy sauce.

    Add mirin and soy sauce, bring to a gentle simmer, and let the broth meld for 10 minutes.

  5. Boil and drain noodles.

    Meanwhile, boil noodles in a separate pot according to package timing, then drain hard.

  6. Serve noodles with miso broth.

    Divide noodles between two warmed bowls and ladle the hot miso broth over the top.

  7. Top bowls with garnishes.

    Top each bowl with bean sprouts, corn, scallions, a half-sheet of nori, and a pat of butter melting in the center.
