Shirazi Salad

The Persian chopped salad of cucumber, tomato, and red onion in fine dice, dressed only with lime juice, dried mint, and a glug of olive oil. Sharp, herbal, and made to refresh whatever heavy stew sits beside it.

Ingredients

  • Persian or English cucumbers4
  • firm ripe tomatoes3
  • small red onion1/2
  • limes, juiced2
  • extra-virgin olive oil2 tbsp
  • dried mint1 tbsp
  • fresh mint, finely chopped2 tbsp
  • kosher salt1/2 tsp
  • black pepperto taste

Steps

  1. Dice vegetables uniformly.

    Dice cucumber, tomato, and onion as small and uniform as you can — roughly 5 mm cubes.

  2. Combine ingredients in a bowl.

    Combine in a bowl with both mints, salt, and pepper.

  3. Dress salad before serving.

    Just before serving, dress with lime juice and olive oil and toss gently.
