Shirazi Salad
The Persian chopped salad of cucumber, tomato, and red onion in fine dice, dressed only with lime juice, dried mint, and a glug of olive oil. Sharp, herbal, and made to refresh whatever heavy stew sits beside it.
Ingredients
- Persian or English cucumbers4
- firm ripe tomatoes3
- small red onion1/2
- limes, juiced2
- extra-virgin olive oil2 tbsp
- dried mint1 tbsp
- fresh mint, finely chopped2 tbsp
- kosher salt1/2 tsp
- black pepperto taste
Steps
Dice vegetables uniformly.
Dice cucumber, tomato, and onion as small and uniform as you can — roughly 5 mm cubes.
Combine ingredients in a bowl.
Combine in a bowl with both mints, salt, and pepper.
Dress salad before serving.
Just before serving, dress with lime juice and olive oil and toss gently.
