Tamago Kake Gohan

The Japanese cult breakfast: a hot bowl of rice, a raw egg whisked through it, a few drops of tamari for depth, scallion to finish.

Ingredients

  • short-grain white rice (cooked, hot)1 cup
  • very fresh large egg1
  • tamari1 tsp
  • scallion1, thinly sliced
  • toasted sesame seedspinch (optional)

Steps

  1. Scoop rice into bowl.

    Scoop the freshly cooked, still-steaming rice into a warm bowl.

  2. Crack egg and drizzle tamari.

    Crack the egg directly over the rice. Drizzle the tamari around the edge.

  3. Whisk egg and rice vigorously.

    Whisk vigorously with chopsticks for 15 seconds until the rice turns pale and glossy with foamy ribbons.

  4. Top with scallion and sesame seeds.

    Top with sliced scallion and a pinch of sesame seeds. Eat immediately.
