Tomato Bruschetta
Crisp-grilled bread rubbed with garlic and piled with sweet tomatoes, basil, and good olive oil — Italy's most generous snack.
Ingredients
- ripe tomatoes3 medium, finely diced
- rustic country bread8 thick slices
- garlic2 cloves, halved
- fresh basil8 leaves, torn
- extra-virgin olive oil3 tbsp, plus more for finishing
- flaky sea saltto taste
- freshly cracked black pepperto taste
Steps
Combine tomatoes with seasonings.
Combine the diced tomatoes with 2 tbsp olive oil, basil, a generous pinch of salt, and a few cracks of pepper. Let sit 10 minutes to draw out the juices.
Grill or broil the bread slices.
Grill or broil the bread slices until well charred at the edges, about 2 minutes per side.
Rub bread with garlic and oil.
While still warm, rub each slice with the cut side of a garlic clove and brush with olive oil.
Assemble and serve bruschetta.
Pile the tomato mixture on top, finish with a drizzle of olive oil and flaky salt, and serve immediately.
