Tzatziki

Thick strained yogurt loosened with grated cucumber, garlic, dill, and lemon — the cooling counterweight to anything hot off the grill.

Ingredients

  • full-fat greek yogurt2 cups
  • english cucumber1, grated
  • garlic2 cloves, grated
  • lemon1/2 (juice of)
  • extra-virgin olive oil2 tbsp
  • fresh dill2 tbsp, chopped
  • white wine vinegar1 tsp
  • fine sea saltto taste

Steps

  1. Drain and squeeze grated cucumber.

    Toss the grated cucumber with 1/2 tsp salt in a sieve. Let it drain over a bowl for 10 minutes, then squeeze out as much liquid as possible.

  2. Stir together yogurt mixture.

    Stir together the yogurt, garlic, lemon juice, olive oil, dill, and vinegar in a bowl.

  3. Fold in cucumber and chill.

    Fold in the squeezed cucumber. Taste and adjust salt. Chill at least 30 minutes for flavors to settle.

  4. Serve with olive oil and dill.

    Serve with a final drizzle of olive oil and a few fronds of dill.
